  • 8 oz Mushroom sliced

Instructions
 

  • Slice the chicken breast in half or flatten it using a mallet. Season the chicken breasts on both sides with salt, pepper, onion powder and smoked paprika.
  • In a mixing bowl, combine the low sodium soy sauce, lemon juice, Worcestershire sauce, olive oil, and minced garlic to make the marinade.
  • Pour the marinade over the chicken and let it marinate in the refrigerator for a couple of hours or until ready to cook.
  • Heat a griddle or skillet over medium heat and add a tablespoon of butter. Cook the sliced onions in butter.
  • Once the onions have cooked and become translucent, add the sliced mushrooms and another tablespoon of butter.
  • Season them with salt, pepper, and garlic powder as per your taste. Stir the mixture together and cover, reducing the heat. Once cooked, take it off the heat.
  • In the same pan, melt the remaining two tablespoons of butter.
  • Cook the marinated chicken on the griddle until it turns golden brown and reaches an internal temperature of 165 degrees Fahrenheit.
  • Top the cooked chicken with the sautéed mushrooms, onions, and a slice of Jack cheese.
  • Cover the smothered chicken with a lid until the cheese melts.
