Ingredients

  • 4 Chicken breasts
  • 1/2 cup All purpose flour*
  • 1/2 tsp Garlic Powder*
  • 1/4 tsp Paprika*
  • 1/4 tsp Black pepper
  • 1/2 tsp Salt
  • 3 tbsp Olive oil*
  • 1/4 cup Chopped fresh parsley
  • 1/4 cup Chopped fresh rosemary
  • 1/4 cup Chopped fresh thyme
  • 2 tsp Dry powdered sage If you can find fresh sage, use 1/4 cup sage
  • Squeeze of lemon (optional)

Instructions

  • Preheat oven to 425 F.
  • In a wide dish mix the flour, garlic powder, salt, pepper and paprika together.
  • Pat the chicken dry and apply a light coat of olive oil.
  • Add the chicken breasts to the flour mix. Evenly coat the chicken with the mix.
  • Heat up a oven-safe skillet* or cast iron pan on medium high heat.
  • Add olive oil on to the pan and let it heat up.
  • Place the chicken, 2 at a time, on the pan and cook each side for about 3 minutes or until golden brown. The aim is to sear the chicken to get a crispy outside.
  • Switch off the heat and add all the herbs on the chicken breasts.
  • Place the pan with the chicken, in the oven and cook for 10 to 15 minutes or until cooked thoroughly.
  • Serve warm with an optional squeeze of lemon and a side of veggies.

Notes

TIPS
  • Make sure the chicken breast is completely dry before coating it with a flour mixture.
  • You can use any blend of herbs that you like in place of the ones listed in the recipe.
  • I highly recommend using fresh herbs to make this great recipe even better! This will create a more flavorful dish.
  • Adjust the quantities of herbs according to personal preference. If you prefer stronger flavors, you can increase the amount of herbs used.
  • Properly seasoning the chicken breasts with salt and pepper before applying the herb crust is crucial. Season both sides generously to enhance the overall taste of the dish.
  • Don’t overcrowd your skillet when you’re cooking the chicken. I recommend cooking two chicken breasts at a time. This will ensure that it cooks evenly.
  • Make sure the skillet used to sear the chicken is oven friendly before putting it in the oven!
  • Let the crispy fried chicken rest for a few minutes after cooking. This allows the juices to redistribute and prevents the chicken from being dry.
STORAGE OPTIONS
This recipe is great for meal prep. You can make a big batch and store it in an airtight container in the refrigerator for 3-4 days. Just make sure the herb crusted chicken breasts have cooled to room temperature before storing them in the fridge.
